We make wine with sheep. Our eco – friendly approach to vineyard management includes a roving flock that munches on grapevine leaves. The sheep feed on the leaves thus exposing the Riesling grape clusters – which the sheep ignore – to sunlight. This brings about healthier grapes with enhanced ripeness. Aromas of crisp apple cavort with peach – pear flavours and a zip of acidity.
